Re: Fungal infection?
Hi Virginia,
This mould grows naturally on moist food stuff in my house.I first observed
it when I left some Kefir leban to mould based on Giacomos experiences with
kefir based cheese.The mould that grew on the leban was a beautiful deep green
and smelled exactly like a Stilton cheese.Unfortunately, as I had added a lot of
salt to the leban , we could not consume any cheese from that batch. I
successfully inoculated another batch of kefir cheese from the green mould but
the
mould soon stopped propogating and I threw it away.Then I decided to leave some
hard kefir cheese I had to mould  have  quite a harvest of this mould now.
After I read some of the stuff on the fungus site I realised how little I know
about this subject matter and worried I maybe doing something quite
irresponsible . Your reply suggests caution in dealing with fungus and I guess I
should
just get some Blue cheese from the store and do the needful.Thanks for your
response.
