Hi Ross,

The ginger beer plant of today, is not a plant as such, or that is
prepared and forms any bio-film colony such as kefir grains of SCOBY or
mother of vinegar.

It is an actual liquid starter-culture, or inoculant, which is prepared
with sugar, water, ginger root with the addition of bakers yeast or
fresh brewers yeast. The media is fed daily for app 7 days, by adding 1
tsp of sugar daily, and then half of it is used to inoculate a larger
volume of sugar/water solution and a little lemon juice [I add a little
chili powder to enhance the ginger bliss-bite factor]. The other half of
the inoculant [plant] is topped up water,  dry [or fresh] ginger root
and sugar. The process is repeated.

The name, "Plant", may have come about due to the large amount of froth
which forms during the 7 day activation process.... loads of CO2 is
produced due to yeasts.
