I'm on a diet very similar to a paleolithic diet to treat Crohn's Disease
(it has worked beautifully).
Actually, my diet is a pale diet in addition to fermented dairy, but that's
it......
I am a member of a list serv that is dedicated to a diet called the
Specific Carbohydrate Diet.
There are a few members on the list using the SC diet for autism with good
results. There is a definite connection between digestive disorders and
metal disturbances.

Here's my take on kefir. One cup of goat milk has 8 grams of carbs,
according to the USDA.
To stay SCD legal, I cannot tolerate any lactose at all, so I ferment my
kefir until it is sour as all heck. In doing so, I'm pretty sure that I can
get the carbs done to 4 grams/cup at least. Here is my reasoning - Lactose
gets digested into galactose and lactic acid by the lactobacillus species
in kefir. The yeast, on the other hand, will make some other by products as
well as alcohol. But there is an energy cost for these microbes to
reproduce and live. So as they digest the kefir, they will be using up some
of the carboydrates. Whenever I eat kefir made this way, I never gain
weight and I can usually maintain ketosis (if I'm trying to be in it)......
