    Hey Cheryl, I think the 'muck', which is dairy curds is normal if
you  are culturing in a warm environment. It could also be that the
ratio is off. I am just learning the process myself. I'm finding that
if I change anything, (such as the area of my counter, or timing, or
leaving the milk in the fridge) I get a different consistency of
kefir. It is all very interesting. As for the curds, I have been
feeding to my dogs as well as blending some into my kefir smoothy. I'm
not sure what else one can do with them. Here's wishing you much
