I suppose if one was really motivated one could let it evaporate ... or
dehydrate it, or bake it or something. There must be some cute chemical
reaction for removing sugar from molasses while leaving "the good stuff". I
don't know what it is though. I tried fermenting molasses to make beer and
a LOT of the sugar remained, BTW. Very, very sweet and alcoholic beer! I
made it with kefir grains but there was not a trace of sour anywhere, and
it was pretty strong. But hey, it's New Years, they deserve something ...
