Increase the temp. to 22 - 25 deg. C (what's that in F again?) will help the
Lb to work harder. Also as mentioned already in previous posts, straining
out the grains after 24 hours then letting the microbes in the (now)
inoculated milk to ferment for a (given?) length of time should do the trick
to remove the rest of the lactose.
i wish I had more data on this. I realy need to get to the uni to get some
interest in this area. This also includes trying to find out the actual PS
thing. One book mentions that the kefiran is insoluble while others mention
it to be soluble.(misprint in the former I would think and on my web page
too...oops)
You got gell-forming and non gell- forming. *the slimmy stuff is the gell
forming PS while the actual grain is the non soluble PS (this is my
understanding any way).
If you cut open a pocket shaped grain (not the flat ones, becasue there are
two diferent types among the grains) the grain oozzes this gell-like PS
(kefiran!!) (ding) ha! another idea .. I wonder if you eliminate the pocket
- like grains, would it reduce the PS in the kefir?

No sorry not actual lit. But it could be a job for the abled? I will
volentere to be a guenea pig for the count any time .. hehehhe! i am due for
a 14 day rice fast. If all goes well, in a few months. This time I will work
with someone here to do microbe counts and calssifications etc... before and
after the fast...!

I would think there is some lit on it because it's been around for many
years. Geroge Oshowa who startedthe macrobiotic thing recommended it. others
flowed throught his works but I am not sure if any cientifc work was caried
out on it. possbily in Japan, but they eat rice as a staple and would think
that this would differ to a westerner?

And what works for one may not necessary work for another... :)
e.g. I gave up smoking cigaretes last year, then that week I contracted UC.
My sister 5 years earlier went throught the exact thing after she gave up
smoking (exactly!!). Cortisone worked for her but not for me. But brown rice
with intestinal inplants of herbs, kefiraride etc. did!
That' the whole reason I tried cortisone because I thought that "same
curcumstances, sister (geneticly close) etc. but nup!
