Re: kefir link; Lifeway kefir; Raw cultured butter;
Funnier enough, I recently traded some kefir grains to these folks
(in Finland, Minnesota) for a couple of their products - some freeze
dried coconut and some powdered kefir culture. That culture produced
a drink that tasted more like buttermilk than like kefir from grains.

I corresponded with someone named Annette Fischer, who didn't realize
that you could ferment coconut milk with kefir culture. She thought
that the antibacterial properties of coconut would prevent it. Now
their website mentions this.

And by the way, I recently bought Lifeway kefir for the first time,
out of curiosity. It has guar gum (for thickness, I suppose), and the
flavor has something of the taste of their farmer cheese, which is
supposed to be made with their kefir culture. I didn't like it nearly
as much as the kefir from grains, though I do like their farmer
cheese.

This morning (Friday), I took a small quantity of grains, and mixed
them with raw milk and some Lifeway kefir, to see what would happen.
I'll report back on what kind of kefir I get, and see what the grains
produce in the future.

I recently found a source of raw cow milk and cream, from a local
organic dairy who delivers to a few homes in the area for pickup by a
bunch of folks. (The raw goat milk as perhaps 25 miles away, so I
haven't gone out there very often.) This gave me a chance to make
some cultured butter, which has been quite a treat. I fermented the
cream for perhaps 18 hours, and had no trouble getting the grains
out. I was afraid to ferment it much longer, because I didn't know
when it would thicken.
