The tartness of kefir is a function of time in contact with the number of grains
you are using: either decrease the number of grains you are using OR decrease
the amount of time they are in contact with the milk. Avoid adding any citrus
juice; kefir is acid enough. Try a ripe banana and a small amount of honey in a
blender with your kefir; I think you'll be pleased.
