I was on BED diet for about two months and just switched to Bee
Wilder's diet which is based on many of the same principles as BED
(Namely Weston Price's research).  I switched because I felt that I
was eating too many carbs on BED.  BED is a good diet, but you will
notice that she doesn't really even commit to the idea of blood type
diets, but presents the info in case it would be helpful, so I
wouldn't get too hung up on that.

If you can get a copy of Nourishing Traditions, there is a good
explanation of why she feels the blood type diet (as well as food
combining) are not necessary.  I'm also type O and I drink coconut
kefir (and am just now adding in a bit of milk kefir).  My most
recent diet eliminates all starches, but compensates with extra good
fats such as coconut oil and butter.  This is also consistent with

I am still taking BED Eco Clear for possible parasites and I use the
culture starter to make my kraut.

For the kraut I use one packet of starter to approx. 3 large heads
of cabbage which I chop finely in a food processor.  I add the juice
of 4-5 lemons and I mix my starter with some honey and a bit of warm
water and let it sit for about 20 minutes before mixing it all in a
big bowl with the cabbage, lemon juice, and a couple of cups more of
water.  I pack it in large mason jars with rubberized lids (normal
canning lids), or I use jars with the old fashioned clamp lids.  It
is nice to use large (2 or 3 liter jars for this).  I fold and roll
cabbage leaves and press in on top so that the cabbage is submersed
in liquid, adding more liquid as necessary to cover most of the
rolled leaves.  Put lids on jars and keep covered or in a dark
place.  The jars will probably leak, so be prepared.  I like the
kraut after about 2 weeks, and I don't refridgerate until I open a
jar.

You can use kefir grains to make kefirkraut, but that is my next
experiment and I haven't gotten that far yet.  I have put some kefir
grains in coconut water and that worked fine.  I use coconut water
from Wilderness Family Naturals.
