Re: question about grain growth
Hi Mark,

The lady who owns gem cultures told me that to make the grains grow faster,
strain every 12 hours instead of 24, then let the immature 12 hr old kefir age
on the counter another 12 hours. I also have heard to shake the kefir jar more
frequently for more rapid growth.

I suppose the key is to keep the lactose available as food for the grains. It
seems that a slightly increased ambient temperature also speeds growth. Being
in FL I suppose that won't be a problem for you.

Some people talk about their grains growing very large. My grains seem to stay
relatively small, but rapidly multiply. I am sure one of the more experienced
members could better answer this part of your question.

   Hello Kefir'ers!

I'm wondering if the grains grow bigger or faster depending on how long
they're left in the medium? Meaning, is there a difference in growth rate if
left longer in the same fermenting medium or if the medium is changed out more
frequently?

Also, could someone tell me how the new little baby critters get started? do
they simply appear out of nothing and then get bigger? Or is it little
fragments of larger critters getting broken off then growing independently that
make new ones??

I know that w/ kombucha, a lot of folks don't understand about how the new
scoby forms often at 1st as a thin, nearly transparent film floating on top of
the tea solution which slowly thickens becoming the thick, ivory-colored,
floating, rubbery, pancake-looking critter called a scoby (symbiotic culture of
bacteria and yeast). The problem is that many folks don't understand this, and
think the new baby forming is mold and that something went wrong when actually
everything is going along as planned.

So any input about these 2 questions wuold be greatly be appreciated.

   This is some group. Geez-O-Man!

I'm getting some critter-grains flown in on their own private jet! Who'da
thought! This group is a class act for sure!

   thanks and blessings
   mark
