Oh, don't feel badly, I was stunned I hadn't thought of it!
I'd been trying to never touch metal of any kind to any of the kefir
family and I kept catching myself blowing it. So, it was shocking to
have ordered an obviously metal strainer without ever realizing what I'd
done.
I'm going to give it a try, probably tomorrow, with some curd that's
partially there already so the time will be lessened..then see if I can
detect any metal taste. With ups and downs in immune system, I may
taste more metal at a low time. Time will tell. Stainless should be
least problematic.
Anyway, I was very grateful you mentioned it!

stainless steel is probably the least of
the metal problems. The blades on your smoothie maker only touch the

My Donvier strainer arrived yesterday. My joy was effectively
dampened
by my doubts about it being metal.
Betty Longman suggested plastic lids for my jars and I'm currently
using
glass lids that sit loosely.
I guess I'd better research through Dom's site again to try to find
where he says, "No metal".
We blend our smoothies in blenders with metal blades, probably
stainless
steel.
The strainer is stainless steel.
It seems to me stainless would be the lowest possible reaction, unlike
aluminum which would be easily leached into the product.
