I just found your post. I defrosted some grains about 2 months ago. They did
"change" for a while. They were stressed. They made good kefir, like you said,
but separated into fine grains instead of being all clumpy. I just thought I
would let you know they did fine after a few months and did start "clumping"
again, with the addition of their protective covering, (mucousy type of coating
- it is goood too). It just takes a while, how are they doing now??
