Tracy,

Mix the thick curds on top with the thin watery whey and that's
your kefir beverage. Blend or stir it together before drinking after
straining out the grains.  The soft cheese-like curds on top are
not grains, but your grains might be embedded in the curds.
Just swish it all together, strain it, and start a new batch with
the grains.
