Re: To Strain or Not To Strain - Also Nutrients in Aged Kefir?
As you age kefir, other things that happen are that lactose content
goes down and alcohol content goes up.  These may not be important
nutritionally, but can be things to consider if you're sensitive to
either of those things.  Dom has a good explanation of aged kefir on
his Web site.
