Thanks for the explanation. Now you have given me pause concerning using milk
grains for water grains. Do you know where I can get some pure water kefir
grains? From what you have said it sounds like this is the way to go for truly
pure water kefir.

Milk kefir-grains can not be transformed to traditional water kefir
grains as such, in true essence of the matter. Although milk
kefir-grains can brew a similar beverage as do water kefir grains
prepared in the traditional manner.
Once milk kefir-grains are transfered to a sugar / water solution to
prepare a water kefir, the milk grains will not grow anymore, after
about 2 weeks, I find. Not even if they are put back in milk.
Water kefir is fermented complete with both variety of kefir grains,
when it is bubbly and a little sweet, or is soured to your liking [to a
point]. This should take 24 to 48 hours. However, if we use traditional
water kefir-grains, and we want to make certain that the growth factor
remains intact, then we do not want to over ferment our water kefir over
some batches. This can damage the delicate growth component of
traditional water kefir-grains, which is not as robust as milk
kefir-grains, I find [and so have many others].
