In general reply to peoples obtaining surface growth:

I put the grain with juice, (ratio approx 1 grain : 5 juice; may vary
widely). shake the bottle tightly close. I always keep the bottle tightly
close (i often hear a sound during the fermentation since the jar is never
perfectly hermetical). By maintaining the jar close, the empty portion has
more chance to be fulfilled by the carbonic gas released by the
fermentation; preventing surface growth and preventing oxygen to interfere
with the process. I also mix (in a strong swirl) the jar 2 or 3 time during
the 48 hours fermentation.
The jar is filled to the two third, approximately.
