I wish to thank all of you who have become part of my life since
starting this list. Since this list has in many ways become a possitive
tool for me, I wish to share some of the fruits that have come about in
recently.
So I thought it time to open my Kefir-cheese cellar door, and bring out
some of the cheese to see the light of day :

These 6 kefir cheeses are made from pure kefir, and are at different
stages of maturation. One has "sufu" (Chinese preserved bean curd) as
part of the ingredient. Can you tell me which one of these 6 kefir
cheese has the "chili sufu" added? (as if it's not obvious hey).The
specekled whiter cheese have "Gomashio" and caraway seed.

The cheese in the jar is Kefir-Leban kept under extra virgin olive oil.
At the bottom of the jar are disk-shaped Kefir-Lebans, while half way up
to the top are round Kefir-Lebans.
The Kefir-Blu to the left is absolutely exquisite!!
This cheese is cultured in a second fermentation using the "Penecillum
Roquefort" mold. The flavour amd texture of this cheese is closer to a
creamy Brie.
Notice the "oozing crust" of this Kefir-Blu? After it's left sitting at
room temperature for 1/2 hour, this top layer of ooze explodes with an
earthy mushroom-like flavour. In comparison to Roquefort or Blue vein, I
use very little salt when making this cheese . Also, the salt I use is
unrefined sea salt, which I refine slightly using a natural simple
system.
The "Formaggio Maturo d' Kefir" (matured kefir cheese) has a flavour and
texture very similar to Pecorino! I also dry this cheese to make a
Parmesan-like Kefir-cheese!
Every time I share an inspiration, i seem to be rewarded many times over
with many more new inspirations! If this keeps up like this, I will soon
rule the world... hahaha!
And the blessed are those whom work at their given gifts... sharing them
with others just adds an extra blessing as a sweet-topping!
