During the Mediterranean Basin period juice was extracted by using
technology borrowed from olive oil and wine making - chopping it up
and then extracting the juice by an edge roller mill, beam press or a
wine basket press. I am sure local Italians have wine presses.

P.S. I got some sugarcane cuttings from a Vietnamese shop in the
Adelaide Market which I am trying to grow. They use them apparently
to make a soup stock - just peel and boil with other herbs and spices.
You can use your wok-still to make cachaca (aguardiente/acqua
ardente)!
